Excursions

Depart the pier for the approximately 30 minute drive following a coastal route to beach-blessed Huanchaco, where you may see surfers riding waves, fishermen tending their nets, and fishing boats on the horizon. On arrival to the waterfront restaurant prepare yourself to watch an award-winning chef prepare Huanchaco's most famous dish: ceviche!

Although the origin of ceviche is disputed, the dish is nevertheless revered in this region. In pre-Columbian times, the raw fish in ceviche was marinated in juice from maize. Today it is marinated in juice from limes, which the Spanish introduced in the late 15th century.

While there are many variations of the recipe, in Peru ceviche is traditionally made with sea bass or sole and topped with diced red onions, minced habanero peppers, and chopped cilantro. It is often served with cold slices of sweet potatoes and corn on the cob. Following the chef's demonstration, you'll enjoy a tasting of the freshly prepared ceviche.

Next, continue on to the beach where you will watch an exhibition by fishermen in traditional reed boats known as sea horses or "caballitos" because the reeds are so flexible the boats look like galloping horses in the surf. The reeds are absorbent, so in time the fishing boats must be stood on their ends to dry in the sand, an image synonymous with Huanchaco.

Following this fascinating look at some time-honoured Peruvian traditions, re-board the coach and travel back to the pier in Salaverry.

Please Note:  This Silver Shore Collection tour requires a minimal amount of walking and is suitable for guests with limited mobility. The cooking demo includes a tasting of the ceviche and is not considered a full meal.

Next, re-board your coach and proceed to a cabuya plant-weaving factory in Chorrillo. The owners of the hacienda, the Ortuño family, have been involved in sugarcane and coffee production for generations.

Sugarcane Processing

Upon arrival, learn about the traditional methods employed in the processing and cultivation of coffee, macadamia and sugarcane produced in the Hacienda. First, observe how the extract of the cane is cooked, poured into moulds and converted into a deliciously sweet treat with macadamia nuts.

Coffee Cultivation

Next, receive an introduction to coffee cultivation. See the process as it progresses from the red coffee berry to the peeled coffee bean covered with the inside parchment, then to the roasted coffee bean. Your coffee introduction culminates in a coffee-tasting session. From here, a visit is made to the Orchid House, one of the country's largest and most exotic collections of orchids, followed by a stop at the macadamia drying and peeling plant.

Lunch, Chapel Visit and Hacienda Store

Lunch is served in a covered hall surrounded by flowering exotic gardens. After lunch, visit the picturesque Colonial chapel brought by German pilgrims in 1880, then proceed to the hacienda's store. Some time is made available here to browse for products produced at the hacienda, including coffee, macadamia nuts, organic sugarcane products, cooking recipes, and other local keepsakes at factory prices. Following your visit, commence the approximate two-hour drive back to the pier.
