As you are walking and building up an appetite, the last stop of the tour will take you to enjoy a cooking class. Upon arrival at the restaurant, you are greeted by the Chef who will entice you with a nice cold Mojito followed by a tasty appetizer. Then the chef will provide you with instructions and all the ingredients necessary to prepare your own Mofongo lunch.

Discover the magic of our 'cocina criolla', by learning  how to create a local favourite, The Mofongo - a delightful mash of fried green plantains and chicken broth into which a combination of seafood, chicken, meat, or vegetables is added. Each participant will become a 'chef for a day' and learn how this incredible Puerto Rican meal is created.  Upon completion of this delicious fare, join your fellow guests at the table to enjoy the fruits of your labor. This is the perfect ending to your historical and cultural experience in Old San Juan.

Following your lunch, make the stroll back to the pier and your awaiting ship.

Please note:  This Silver Shore Collection involved extensive walking over cobble-stones and uneven surfaces along with some inclines.  This tour is not suitable for guests with limited mobility or for those who utilise a wheelchair.  We suggest guests wear lightweight comfortable clothing, flat walking shoes and sun protection.  Your menu consists of one Mojito cocktail, an appetizer, house salad, plantain Mofongo filled with chicken, one soft drink, a delicious dessert and coffee. Excursions

Get ready for an experience like no other; you are about to FLY on this exciting adventure.

The Original Canopy Tour operates in La Marquesa Forestry Reserve, which is owned by the Municipality of Guaynabo. This 890-acre (360-hectare) property is located about 20 minutes southwest of San Juan.

The company that operates this tour has 12 years of experience and operates in 5 different locations.  Safety is number one and their guides receive 200 hours of training prior to commencing work with the public.  The tour consists of 8 traverses and 10 platforms that allow the guests to swing from tree to tree on a safe double line system that is so easy to learn that a 15-minute explanation is enough to get anybody started.

Upon arrival, you have a twenty minute period to sign the waiver, use the restrooms and get geared up. Gear consists of a harness, a set of gloves and a helmet, plus a variety of buckles and straps that the guides attach to the harness.

Then the adventure begins when you board a trolley or funicular to advance you to the commencing area. Walk up a short but steep hill to embark on a narrow, graveled trail that slowly leads you uphill. After approximately ten minutes, arrive at the first platform, a nice wooden deck that accommodates groups of up to 10 for a detailed demonstration of the procedures.  After listening to a brief explanation of the system, key instructions and positions, the guide will ask for the first brave volunteer to step up and away into the forest.

Glide from platform to platform enjoying a bird's eye view of the forest while at the same time enjoying the rush of gliding, falling, and flying, through the trees. A lush tropical landscape is the backdrop for this activity as you soar through the treetops. This is a once-in-a-lifetime experience that definitely allows you to enjoy Puerto Rico from a different perspective.

Upon completion of the canopy course, return to base and re-join your transfer for the return ride to the ship's pier.

Please note:  This tour involves moderate to extensive activity and is for guests in good physical condition.  Guests must be able to hike on a natural trail for 15 minutes and have the ability to climb stairs.  Guests who suffer from acrophobia or vertigo should not plan on participating in this tour.  The minimum age for participants is 12 with a maximum weight for any participants of 270 pounds (122 kilograms).  All participants must complete a waiver prior to participating.  We suggest wearing shorts or long pants, sun protection and bring a hip-sack or backpack to keep your personal items as your hands must remain free during the zip.

Excursions

Explore the highlights along cobblestone streets and gain a fascinating guided look at the history of Old San Juan during this walking tour of the old city.

Fort San Cristobal

Upon disembarkation, meet your experienced guide who will lead you through the historical Old City including a visit to Fort San Cristobal, a fortification that successfully defended the old city from attack by the British and Dutch in centuries gone by.

Next, walk into the City through one of the side streets and commence on a stroll through history. Getting just off the beaten track offers some fascinating finds that eludes most visitors that never leave the main streets.

Plaza San Jose

Walk uphill through the cobblestone streets until you reach the Plaza San Jose, with its statue of Juan Ponce de Leon that was made from melted down British cannons. The next stop, the Plaza of the Quincentennial, is a celebration of the discovery of Puerto Rico.

Casa Blanca

Continue to Casa Blanca, the first fortification ever built in old San Juan and the Ponce de Leon family home. Here you explore the almost Romanesque gardens and fountains.

La Plazoleta de la Rogativa

Exit the gardens of Casa Blanca through a partially hidden access to Calle Sol, or the Street of the Sun. After making the tight descending turn downwards, you suddenly find yourself in the most beautiful section of the entire old city - the Plaza of the Procession. Dominating this little park area is a statue commemorating the miraculous saving of the old city from sacking by the British in the 16th century.

This vantage point offers views of the Governor's Mansion, the El Cañuelo fortress across the port entrance and the Bacardi distillery. A short walk down hill through San Juan Gate takes you to the water's edge. As you return through the San Juan gate continue to San Juan Cathedral, retracing the steps of the original conquistadores. Your guide will walk you to the corner of Cristo & Fortaleza Streets; at this point you decide if you wish to have the guide escort you back to the ship or if you wish to stay to explore the many boutiques and shops that line the cobblestone streets of the old city and return to the ship at your leisure.

Please note: This tour involves an extensive amount of walking over uneven surfaces, steep inclines and is recommended for guests in good physical condition. It is not suitable for guests with heart or respiratory conditions, leg, knee, neck, back problems, or limited mobility, or those who utilise a wheelchair. The order of sites visited may vary. If Casa Blanca is closed, a visit to Cuartel Ballaja, the last building the Spanish built in the Americas and now a cultural museum, will be substituted.

Excursions

Explore the El Yunque Rainforest, a contender for the new Seven Wonders of Nature.

The El Yunque Rainforest, covering 28,000 acres (11,200 ha), contains 75% of the virgin forests left in Puerto Rico. The entire area is a bird sanctuary and holds claim to being the only tropical rainforest in the U.S. National Forest System. Thanks to receiving 100 billion gallons of rain per year, the forest is able to sustain some 250 species of trees, 50 types of ferns and as many as 20 varieties of wild orchids. In addition to the flora and fauna, El Yunque is also home to an array of Puerto Rican wildlife.

El Portal

Your rainforest visit includes a stop at El Portal, the modern and airy visitor's centre constructed to blend into the natural surroundings. Inside, the exhibit space is devoted to explaining the importance of tropical forests.

Baño Grande Hiking Trail

Continue with photo stops at La Coca Falls and the Yokahu Lookout Tower, then explore the rainforest in depth on a nature hike accompanied by your driver/guide. The low-impact 25-minute walk on the Baño Grande Hiking Trail allows for an unforgettable hands-on experience. Beginning at the Palo Colorado Information Centre, the trail passes the Baño Grande, a large man-made pool, then enters the Palo Colorado forest, one of four forest types in El Yunque Rainforest. Stop to see an example of the work that the Forest Service has done to help conserve the Puerto Rican Parrot, cross a picturesque stream, and exit the trail at another Information Centre.

After this invigorating walk, board your transport for the return journey to the ship.

Please note: Tour involves a moderate amount of walking. There is walking over pathways at some of the stops and 96 stairs at the observation tower, although this climb is optional. We recommend wearing flat, comfortable walking shoes and bringing an umbrella and/or light raincoat. The drive to El Yunque is approximately 1 hour each way. The order sites are visited may vary.

Spend the day discovering and tasting one of San Juan's most famous products- Bacardi Rum.

Your tour begins with a transfer to the south side of San Juan Harbor, where you will enter the beautifully manicured grounds of the Bacardí Rum Distillery, the world's largest distiller of natural spirits.  Upon arrival, you will be escorted to your classroom for a private Rum Mixology Seminar led by your Bacardi Brand Specialist, a Master in Rum.  For the next 45 minutes to an hour, the conference speaker will lead your group in the preparation and understanding how each of the signature cocktails is created - typically Bacardi Cuba Libre, Bacardi Mojito and a Bacardi Flavors Drink are presented and prepared, though this is subject to change. Each participant will be standing and acting as bartender and at the end will receive a Bacardi University Rum Mixology Certificate, and a $10 Gift Certificate for use in Casa Bacardi, the Brand Merchandise Store.

Following the seminar, you will continue to the interior patio of the Bacardi Visitor's Center.  After passing through a large room containing a fountain and three large prints with historical representations, you will enter the theater and view a short film covering the Bacardí Family history as well as that of the Bacardí Corporation. You will then enter a replica of an old distillery that houses an excellent display; here your guide will provide commentary and answer questions.  And you will have the opportunity to smell that final product; you will enjoy the aroma of the different type of rums that are bottled at Bacardí.

Your tour will continue to the Bacardí cocktail lounge, which resembles a 1920's bar in Cuba (the era of the prohibition).  A bartender will explain and show you how to prepare the first three cocktails ever made with Bacardí:  "Cuba Libre", "Daiquiri" and "Mojito Cubano", and you'll learn what inspired Bacardí in the preparation of these three cocktails as well as how they got their names.

As you exit, you will board an open-air tram who will take you to the open-air pavilion, where you will be treated to complimentary rum drinks.  Adjacent to the pavilion is the Casa Bacardí gift shop where one can purchase Bacardí Rum as well as many other Bacardí products.

Explore the underwater world surrounding St. Barts from the comfort of a semi-submersible boat. The boat remains on the water's surface, while stairs lead you down into the hull, surrounded with glass viewing windows. Take in the scenes without getting wet on this under-the-sea adventure.

Walk from the pier to the awaiting semi-submersible submarine and gather on the main deck for a safety briefing. Cruising out of the main harbour, remain top-side or descend into the hull of the sub. As you reach the entrance of Gustavia's harbour, you may see some of the many green turtles known to reside in the area. Pass over the wreck of the 50-feet (15-metre) island freighter Marignan, sunk during the famous hurricane 'Luis' in 1995. On the way to your next stop, the vessel crosses the south-east edge of the St. Barts Marine Park, where the sea is full of colourful coral reefs, gently 'invaded' by troops of striped 'sergeant major' fish.

As the semi-sub arrives at a group of three tiny rock islands called 'The Saints', the crew feeds the surrounding fish, creating a flurry of marine activity. You may even see a shark at this time.

Returning to the pier along the same route, you can remain below or if you prefer, cruise on the upper deck and watch the beautiful anchored yachts and shores of St. Barts.

Please note: This tour requires a minimal amount of walking; however, guests must be able to walk a short distance to the sub and negotiate steep stairs to enter and exit the sub's hull. Excursions

Enjoy a panoramic ride around this tiny island and discover the many hidden beauties for which St. Barts has become famous.

Minibus 'taxis' with drivers who speak varying degrees of English with a heavy French-West-Indian accent, take you on a drive through St. Barts. The first stop, at Le Col de la Tourmente, overlooks the most popular beach, St. Jean Beach and the island's airport. The taxis then follow take the road to Salines (salt ponds), an industrial area of the island. At one time St. Barts exported salt all over the Caribbean.

After Salines, your driver will go through Petite Salines, the only place on the island where you cannot see the ocean, and continue to Grand Fond. The view is breathtaking, with the road overlooking the green valley and the raging ocean breaking on the shoreline. It is very windy, and the landscape is very different from the rest of the island. Only a few years ago, Grand Fond was the cattle center for St. Barts, home not only to many cows, but also goats and sheep.

Continue on the road along the coast to see the house that belonged to the famous Russian dancer, Rudolf Nureyev. It is located right on the rocks facing the ocean. Pass Petit-Cul de Sac (small salt pond) and Grand Cul de Sac with its large lagoon and many hotels and resorts. It is here that the 24-hour windsurf regatta is held in August each year. Continue to Marigot, famous for its wine shop, La Cave, that has in stock over 300,000 bottles of wine, ranging from the cheapest to the most rare and expensive. Then continue to L'Orient and its two flower-filled cemeteries.

Passing La Vigie and Coupe Gorge, (it is said some pirates cut throats there!), your vehicles  return to the St. Jean area before taking the road to Corossol, once famous for its women who wore traditional white bonnets and were known for weaving straw hats and baskets. Please note that this does not exist anymore, despite what is written in the guidebooks. After climbing the last hill, your taxi returns to Gustavia. Depending on traffic conditions, the taxis will either stop in the parking lot next to the pier or in town at the main taxi station.

Please note: This tour involves a minimum amount of walking; however, guests must be able to climb in and out of a minibus taxi. This is not a guided tour; it is an orientation drive of the island. Your driver may speak only rudimentary English. The cost of this tour is based upon 6 guests in each van as opposed to 8 as standard for other cruise lines. The cost of this tour reflects the lower occupancy of the vehicles.

Excursions

Take an exciting Silver Shore Collection aerial tour by helicopter to see the amazing spectacle often referred to as the 'Pompeii of the Caribbean'.

The flight to the volcanic island of Montserrat just 27miles (43 kilometres) away offers a view of a live volcano and the dramatic impact 'nature's wrath' has upon a small nation. Enjoy live narration from your pilot as he safely showcases the magnificent landscapes, coastline, tiny villages and the periphery of the volcano's cone.

This exclusive flightseeing excursion to Montserrat's volcano reveals the spectacular contrasts of a population existing on a tiny island dominated by the presence of an active living, 'breathing' volcano.  The Soufriere Hills volcano began erupting in 1995, covering half of the island with ash and uprooting more than half of the population.

From the pier, a 15-minute transfer by taxi brings you to the heliport. After a safety briefing, soar over the Fort James beach and head in a southwesterly direction to Montserrat. Flying at an altitude of 1,500 feet (457 metres), look out for dolphin, whales, turtles and see beautiful reefs along the way.

Approaching the magnificent mountains in the island's central area, the 3,000-foot (914-metre) high volcano comes into view - your pilot will fly twice past the cone so guests can get the best view of the continued action of emitting ash, smoke and steam. Following devastating eruptions, over half of the population fled the island leaving the capital, Plymouth, uninhabited. In some places the town is buried under 40-feet (12-metres) of ash. Your helicopter will cruise at 150 feet (45 metres) in some areas, affording a good perspective of the deltas, coastline, buried airport and villages. Your 50-minute flight will conclude at the Antigua heliport.

Excursions

Advanced scuba divers, enjoy your own private boat and dive Instructor for a two-tank dive on one of the World's most renowned wreck dives, during this Silver Shore Expedition.

Today the Rhone is considered to be one of the world's best wreck dives. It is rated number one in the Caribbean. Two dives are needed to cover both the bow and the stern sections of the Rhone, but you'll want to do more.

The Wreck of the Rhone

The entire bow section, including the sharp prow, mast and lifeboat davits, can be seen from the surface.  At 80 ft. (24m), the deeper bow section is dived first.  As you descend down toward the ghostly image you'll be greeted by huge schools of Sennets and a large barracuda. Still mostly intact the cavernous interior can be entered from several points near the forward mast.  Inside, the hull is coated with Orange Cup Corals and school of grunts, accompanied at times by a variety of jacks and the resident Barracuda fondly known as 'Fang'.  Scenes from the movie The Deep were filmed here.

After a 45-minute break, the second dive of the day is on the shallower middle and stern sections.  The stern section is more broken up, but the structure of the ship can be easily traced by following the drive train from the massive shallow propeller. Scattered across the bottom are boilers, deck supports and other pieces, many holding fascinating relics of the ship such as tools or silverware, including the silver spoon Captain Wolley used to stir his tea. The holds are lined with Orange Cup Corals and filled with schools of snappers and jacks.  Nearly every solid surface of the wreck is covered with a kaleidoscope of corals and sponges.

Upon completion of your second dive, cruise back to the ship's pier while sharing the excitement of what you have just witnessed with your dive master.

Please note:  This exclusive dive charter is sold per boat and can accommodate up to 4 divers, or non-divers and only one person in your party need reserve a single ticket for this programme. This certified scuba dive is for certified divers that are Advanced or higher and have logged a dive within the past 2 years. A PADI waiver and medical questionnaire must be completed in full; along with producing your certification card for review to participate. Dive Instructor reserves right not to take diver on tour if paperwork is incomplete/out of date or if medical concerns exist. Dive boat does not have restroom facilities. This programme includes all the necessary scuba equipment, beverages, and your private dive master guide for up to 4 divers. Also you can invite your non-diving friends to join you on your exclusive dive boat. Once reserved, this programme becomes 100% non-refundable within 8 days of sailing.

Excursions

Discover Tortola's historical past and cultural heritage during this half-day panoramic sight-seeing excursion.

Old Government House Museum

Depart the cruise ship pier for a drive through the capital city of Road Town to the Old Government House Museum for a short visit. The official government residence until 1997, this gracious building now displays a nice collection of artifacts from Tortola's past. The rooms are filled with period furniture, hand-painted china, books signed by Queen Elizabeth II on her 1966 and 1977 visits, and numerous items reflecting Tortola's seafaring legacy.

Sunday Morning Well

Continue on, passing by the historic site of the Sunday Morning Well. Considered to be the most meaningful historical site on the island, this national monument is one of the sites where the Proclamation of Emancipation was read in the territory of the Virgin Islands proclaiming 5,133 Negro slaves free. As you drive past, see the territory's High School and the adjacent Legislative Council Chambers.

St. Phillip's Anglican Church

Following the coast road out of Road Town, pass the Territory's largest yacht charter company - the Moorings as you journey to the ruins of St. Phillip's Anglican Church. The ruins are the remains of the first Anglican Church built for liberated Africans in the Americas. The village was established as a settlement for Africans liberated from slaving vessels after Britain outlawed the slave trade in 1808.

Originally constructed in 1840, the Church will be restored in the near future. The walls of St. Phillip's are virtually all that remain of the free African settlement at Kingstown. The real importance in this church lies in the fact that it is recognized as being the first church to liberated Africans in all of the Americas.
