RIKI SENN creates, writes and edits curriculum for Viking Cooking School locations throughout the United States, and assists with operations. A 25-year veteran of the culinary industry, Ms. Senn has been both chef and partner in two restaurants, a chef for a restaurant development company, and a fine dining chef at the world-renowned Greenbrier Resort in West Virginia. In addition to her responsibilities at Viking, Riki is a member of the Board of Directors for the International Association of Culinary Professionals.

EVE JONES is a lecturer in wine studies and a writer specialising in hotels, restaurants and travel. She twice won the Glenfiddich Award as Trade Press Writer of the Year, and has been a hotels and restaurants inspector. A visiting lecturer at the Malta Institute of Tourism Studies for several years, Ms. Jones also teaches examination courses in wine studies and tutors wine tasting. She will be joined by her husband, RONALD F. JONES, one of Britain’s best-known hoteliers. Since his retirement as Director of Claridge’s, the Jones’ have been hotels consultants in Europe and the United States.
